Today i’m sharing one of our favorite healthy instant pot recipes, quinoa sweet potato bowls!

Ingredients:
- 2 Sweet Potatoes
- 1 Medium Onion
- 4 Cups Broccoli
- 1 Cup Quinoa
- 2 Tbsp Olive Oil
- 1 Tbsp Real Salt
- 1 Tbsp Granulated Garlic
- 1 tsp Better Than Bouillon

Sweet Potatoes
- Heat 1/2 cup water in instant pot using saute setting on high.
- Peel and chop sweet potatoes. Add to steamer basket and place in pot.
- Close and seal lid. Pressure cook for 7 minutes.
- Allow pot to natural release, turn nob to venting and remove basket from pot.
- On a baking sheet, drizzle a little olive oil and spread to prevent sticking.
- Pour sweet potatoes on pan and season with some salt and garlic.
- Broil on high for 3-9 minutes. Checking / shaking pan every 3 minutes.
Broccoli
- Place chopped broccoli in steamer basket and put in the Instant Pot with 1/2 cup water.
- Close lid. Seal pot, and pressure cook on high for 2 minutes.
- Quick Release Steam once timer goes off.
- On a baking sheet, drizzle a little olive oil and spread to prevent sticking.
- Pour broccoli on pan and season with some salt and garlic.
- Broil on high for 3-9 minutes. Checking / shaking pan every 3 minutes.
Quinoa
- Heat Instant pot to saute, add olive oil.
- Dice onion and saute in pan.
- Rinse one cup quinoa well in a bowl with fine mesh strainer.
- Add quinoa to Instant Pot, along with 1 1/2 cup water and bouillon.
- Allow 10 minute natural release, then turn valve to venting and wait for pressure valve to drop.
- Open pot and serve a scoop of quinoa, sweet potatoes, and broccoli together in a bowl.
- Garnish with sesame seeds and smoked chipotle. Enjoy!
